If you were to ask Mike Speltz what it’s like to run Appleton’s award-winning video department, he would tell you that it’s a delicious job. Case in point: the Appleton video team recently traveled on-assignment to the West Coast to visually document the International Corporate Chefs Association (ICCA) 10th Anniversary Summit.
The 3-day culinary celebration was held in San Francisco, California, titled Innovation for the Next Decade, and featured noteworthy speakers from different food perspectives including culinary leaders, business owners, and professors.
As a bonus to the video assignment, we heard from nationally recognized chefs and learned firsthand the latest trends and challenges facing the culinary industry today. And we got to eat. “San Francisco chefs are passionate and in order to keep customers coming back for more, their food must be one of a kind,” Mike said.
The highlights of the trip include getting a glimpse of the Maple Leaf Bakery and learning about their process of large scale cooking, partaking in the Taste of San Francisco trip led by Betelnut’s chef, Alexander Ong, and experiencing the unique cooking styles of the restaurant Zero Zero.
Mike explains that like most businesses, one of the largest challenges facing chefs today is tapping into the millennial generation. Millennials are a digital-driven generation, so part of the event focused on how to communicating to Millennials through social media, interactive websites and video (a few areas Appleton Creative knows well).
